Mocha Chocolate Chip Banana Muffins


These are a favourite in our house. The combination of mocha, chocolate and banana smells and tastes amazing! These moist muffins freeze very well.


1/2 cup butter or margarine

1/2 cup unsweetened applesauce

1 1/4 cups white sugar

1 egg

3 ripe bananas, mashed

1 tsp vanilla

2 tbsp instant coffee

1 tbsp water

2 1/4 cups white flour

1/4 tsp salt

1 tsp baking powder

1 tsp baking soda

1 cup chocolate chips


Preheat oven to 350F. In a food processor, blend margarine, sugar, egg, bananas and vanilla. Mix instant coffee with water in a small bowl. Add to banana mixture and mix well., coffee and vanilla for 2 minutes. Add the flour, salt, baking powder and baking soda. Stir until just blended. Add chocolate chips and mix. Spoon mixture into 15 – 18 muffin cups.

Bake for 25 minutes. Cool on wire racks.
