Fruit, Feta and Balsamic Salad



There are many different colours and flavours in this salad but they work so well together. This salad not only looks wonderful but tastes even better. This was a big hit at a couple of gatherings this summer.

One of my favourite things to eat is balsamic vinegar. After a trip to Italy one of my prized possessions was my 21 year aged balsamic vinegar. WOW! What a difference 21 years makes!! You don't have to use high end balsamic for this recipe ... but if you have it, why not? :) In this recipe the balsamic mixed with the fruit and feta is amazing and fresh.

8 cups baby romaine leaves or baby spinach leaves (or a mixture of the two)
1/2 medium red onion, sliced and separated into rings
1 (11 ounce) can mandarin oranges, drained AND/OR 1 1/2 cups sliced strawberries
1 cup sweetened dried cranberries
1 cup hulled sunflower seeds (OR honey-roasted sliced almonds)
1 cup crumbled feta cheese
1 cup President's Choice "Maple Balsamic vinaigrette" salad dressing, or to taste

Place servings of lettuce/spinach onto salad plates. Top with red onion, mandarin oranges, cranberries, sunflower seeds and feta cheese in that order. Drizzle dressing over each salad.

Tips:
1) Instead of using President's Choice "Maple Balsamic" salad dressing you could substitute any balsamic dressing or Asian Sesame dressing.
2) Try adding pear slices or grapes.
3) Don't drizzle the dressing over the salad until you're ready to serve. The spinach leaves will wilt quickly once the dressing is on and won't look as nice.
